 Post subject: Zucchini Fritters

These are a cool version of the simple potatoe fritter - tasty and nutiritious too!!

Ingredients
2 medium sized zucchini coarsely grated
Salt
Ground black pepper
1 large egg
2 good sized Spring Onions/ Scallions finely chopped
1/2 cup all-purpose flour
1/2 cup grape seed oil or olive oil
Sour cream or plain yoghurt

Salt the zucchini with about 1 teaspoon of salt. Try to remove the excess moisture. The flash places use a potato ricer to squeeze out the moisture. I find paper towels work just as freakin well! I've read that putting the zucchini in a colander set in the sink to let it drain for 10 minutes after salting it is the real way to do it. That's cool if ya got the time, man, give me the paper towels!!
Whisk the egg in a large bowl and add the zucchini, flour, scallions, and 1/4 teaspoon of pepper. Mix til its all combined.
Heat oil in a large skillet/ frying pan/ whatever you wanna call it over medium heat. Cook fritters in two batches. Drop six individual dollops of the mixture into the skillet. Flatten slightly. Cook, turning once, until brown for about 4-6 minutes on each side. Transfer to a paper towel-lined plate (more power to the paper towel man!!). Sprinkle with salt. Repeat with remaining mixture.
Serve immediately, with sour cream or plain yoghurt on the side. These work real well with a summer salad deal - tomoatoes, crispy lettuce, maybe a yellow capsicum - yum!! If ya got any fresh herbs (havetabe fresh tho - none of that dried shit), then a bit of mint will really give the whole thing a fresh, clean taste.

Sounds good! I'm gonna grow some Zucchinis... grew some last year and they just keep producing for ages...

The garden's over flowing with Zucchinis right now and I gave these a go over Christmas!! Good stuff too. I left out the cream though but added an avocado/ quacamole (Spelling??) kinda thing instead.
I have heaps of these growing at the mo - I usually scoop the middles out and fill them with a tomato, garlic and basil deal and roast/grill them.
Any more ideas???

let me see what i can a-do Mr Scan Man. Avocado sounds a real good match. If you eat meat man, try that with some chicken. I'll get to thinkin about more zucchini dishes
